Going out on Valentine's Day can sometimes be challenging. Trying to get reservations at your favorite restaurant, finding a sitter (that isn't busy) for the kids, and getting all dolled up, just to fight the crowd of TONS other couples! It can often make for more of a hassle than a fun night out with your husband. Why not have a nice dinner for two (and maybe the kids too) at home for the holiday and wait a week or two to go out and celebrate. If you wait to celebrate on another weekend it can be less stressful and more enjoying for both you and your husband, not to mention a lot less expensive! Here is an easy and affordable dinner that you can make at home for two... or more!
Filet Mignon

2 teaspoons Margarine or Butter2 1" inch thick; 4 oz. Beef Tenderloin Steaks, (filet mignon)
1/4 teaspoon Salt
1/8 teaspoon ground Black Pepper
1 large Shallot, finely chopped
1/2 cup non-alcoholic dry red wine for cooking
2 tablespoons chopped fresh Parsley
In nonstick 10", heat 1 teaspoon margarine over medium-high heat until melted and hot but not smoking. Add steaks; sprinkle with salt and pepper and cook 10 minutes for medium-rare or until of desired doneness, turning over once. Transfer steaks to 2 dinner plates.
To same skillet, add shallot and cook over medium-high heat 5 minutes or until tender and golden, stirring occasionally. Add non alcoholic cooking wine and heat to boiling. Cook 1 minute, stirring. Remove from heat and stir in remaining margarine. Spoon sauce over steaks. Sprinkle with parsley.
Lemon Butter Green Beans

1/3 lb. fresh Green Beans1 tablespoon unsalted Butter
1 tablespoon minced Shallots
1 tablespoon Pine Nuts (or sliced almonds if desired)
1 teaspoon fresh Lemon Juice
Pinch Salt
Pinch freshly ground Black Pepper
Trim ends of green beans and blanch in boiling salted water. Drain green beans well and pat dry.

2 lbs. Russet Potatoes, peeled and chunked (about 3 lg. potatoes)Salt and pepper
1/2 cup half-and-half or cream
4 oz. Garlic and Herb cheese (recommended: Boursin)
3 tablespoons chopped chives or, 2 scallions, thinly sliced
Place potatoes in a pot and covered with water. Cover pot with lid and bring water to a boil. Salt boiling water and potatoes. Leave lid off pot and simmer at rolling boil until tender, 8 to 10 minutes.
Drain potatoes and return to hot pot. Smash potatoes with little half-and-half (or cream) and garlic and herb cheese. Smash and incorporate chives. Add salt and pepper, to your taste.
Warm Chocolate & Caramel Cake

Butter, softened1 jar good-quality Caramel Sauce
1 1/2 cups sifted Cake Flour
1/3 cup Dutch-process Cocoa
1 teaspoon Baking Soda
1 cup Sugar
1/2 teaspoon Salt
1 cup strong brewed Coffee, warm
1/3 cup light Olive Oil
1 1/2 teaspoons Vanilla Extract
1 tablespoon Aged Balsamic Vinegar
Generously coat six 6 oz. ramekins (small oven safe bowls) with softened butter. Chill in the freezer for about 10 minutes, and brush with a second coat of butter. Pour 3 tablespoons caramel sauce into the bottom of each ramekin and transfer to the freezer for 1 hour.
Whisk the cake flour, cocoa, baking soda, sugar, and salt together in a large bowl and set aside. Stir the coffee, oil, vanilla, and vinegar together and whisk into the flour mixture just until smooth.
Fill each ramekin with 1/3 cup of batter. Bake at 400 degrees F until the cake is set and a toothpick inserted in the center comes out clean, and the caramel has bubbled up the sides, about 20 minutes.

Last week I was asked by MyBlogSpark if I wanted to try out the new Fiber One yogurt. I have seen this yogurt at the grocery store, but I have admit I have never given any thought to trying it.
